Kindra Peterson, MS, RD
Kindra is a Registered Dietitian. She received her Bachelor’s of Science Degree in Nutritional Science from California Polytechnic State University at San Luis Obispo, and her Master’s of Science Degree in Nutrition from University of Utah in Salt Lake City. Kindra has almost 20 years of experience working in Healthcare and Nutrition and over ten years of teaching experience, specializing in courses related to nutrition, health and wellness at the University level. She previously worked at a cancer center in Chicago, Illinois. Kindra has presented at numerous conferences, symposiums, seminars, community wellness events and health fairs. Kindra also has extensive experience working in long-term care and the acute hospital setting. Kindra is a member of the Academy of Nutrition and Dietetics and a member of the Oncology Nutrition Dietetic Practice Group.
Laura Minighini, RDN, CNSC
Laura is a Registered Dietician Nutritionist and Board-Certified Nutrition Support Clinician for Enteral and Parenteral Nutrition. She received her Bachelor of Science Degree in Dietetics from San Francisco State University and completed her registered Dietician Nutrition internship at Iowa State University with emphasis on Oncology nutrition.
Laura has almost ten years of experience working in medical nutrition therapy and nutritional counseling at two major San Francisco medical centers and at numerous skilled nursing, rehabilitation and long-term facilities. Laura has presented seminars on diabetes and cardiovascular disease prevention in the San Francisco Bay Area and frequently participated in city wellness programs and health fairs. Laura speaks Spanish and Italian and takes great pride in her knowledge of the Mediterranean diet and understands the value of family food traditions in the healing process. In addition, she has many years of experience in the nutrition supplements and botanical industry. Laura was President of the Diablo Valley District, California from 2016-2017 and currently a member of the Academy of Nutrition and Dietetics and the Dietician in Nutrition Support Dietetic Practice Group.
